Bye bye, weekend

Why must the weekends always go by SO fast?!? I would usually not be very excited about this, however, I am actually pretty happy because it gets me that much closer to Summer!!!

So today I had some pretty delish eats to show you guys…starting with of course breakfast:

Overnight non-cooked oats:

The night before, I mixed the following in a bowl:

  • 1/2 cup old fashioned oats
  • 1/2 cup almond milk
  • 1/2 cup water
  • cinnamon
  • tbsp of chia seeds

Then in the morning, I added:

  • 2 huge scoops of plain greek yogurt (vanilla would be good!)
  • 1/2 sliced banana
  • scoop of kroger natural peanut butter

This is going be a great bowl for summer breakfasts when I don’t want something hot. The only thing I think it needed was a bit more sweetness. I think that next time in order to add sweetness, I will either:  1.) mash the banana  2.) use vanilla yogurt  3.) add vanilla protein powder. We shall see…

Then lunch was a classic favorite of mine:

1/2 whole wheat bagel with 2 microwaved egg-whites, 1 piece of cheese, and 1 Morningstar soysauge patty. So good. Plus some overnight slaw. And an orange (unpictured)

After my lunch digested, I decided to get in some exercise. But I was feeling like some leisurely exercise, so I hopped on the treadmill and power walked at an incline while I read a magazine and rocked out to my music. The perfect way to workout.

This afternoon’s snack rocked my socks off.  I had been meaning to try this smoothie combo based off one that Jenna had posted a while ago. I finally got the ingredient I was missing, so I decided to give it a shot today. Boy, was I glad I did.

For the smoothie, I added these items in a blender:

  • 1 frozen ripe banana
  • 3 chunks frozen mango
  • 1 cup vanilla almond milk
  • 1/4 avocado (secret weapon!)
  • tbsp flax
  • scoop of vanilla protein

I blended the heck out of it and the result was nothing short of amazing.

This was the CREAMIEST, most delicious smoothie EVER. Seriously, you guys need to try this combo…the avocado is what really makes it out of this world!

And now onto dinner…I decided to bake some tofu:

Usually when I do this, I mix together 2 tablespoons of oil, 1 tbsp agave nectar, 1 tbsp soy sauce, and then just throw in whatever spices/seasonings that I want (unmeasured)  There was some minced garlic, garlic powder, onion powder, parsley, and cumin in this mixture. I baked at 400 degrees for 35 minutes.

I paired the tofu with leftovers from last night…another recipe a la Jenna!! I have been trying to get more familiar with Indian cuisine, so I decided to try my hand at my favorite Indian dish yet: Channa Masala!!!

The channa masala definitely gets even better the day after. It was SO flavorful tonight! I can’t wait to attempt to make more Indian in the future!

Now I’m going to go spend some time with the Fam and hopefully watch Desperate Housewives! 

Oh, and before I go, I  wanted  to mention that…I was MEAT-FREE all weekend! Lately I have found that meat just hasn’t been all that appealing to me. I am really glad that I am cutting down on it, and I am actually feeling much better, too!

    your eats look SOOOO delicious! i wish I had a blender at school so I could try that smoothie recipe! I am absolutely obsessed with granola too… it’s hard to eat just one serving at a time! I hope you had a fantastic weekend!!

    WHOA, I’m definitely loving the sounds of that smoothie combo… so much good stuff blended into one glass. I have yet to try avocado in a smoothie but I’ve been meaning… I guess now I know it’s a winning combo for sure!

    Mmm. I love cold, overnight bowls. I recommend adding yogurt to the mix next time! Your smoothie also looks amazing, avacado has become one of my favorite foods this year. Ooh and I’ve tried that Flax Plus granola, it’s amazing. They also have a Hemp Plus which you might wanna try as well.

    i looove channa masala!! it’s one of my favorites 🙂 yum.

    isn’t meat free so effortless? people sometimes feel sorry for me because I don’t eat meat, but we totally aren’t missing out on anything!

    Flax plus granola is a staple in my cupboard. my favorite kind!!!! also, try the hemp!! delish!!
    that smoothie looks so intreguing.. though i hate bananas… maybe i will do frozen blueberries? yeah.
