Veggie Chili

Ingredients:

  • 1 tbsp EVOO
  • 2 bell peppers (I used red and yellow)
  • 1 1/2 cups mushrooms
  • 1 chopped onion
  • 2 chopped celery stalks
  • 3 minced garlic cloves
  • 1 tbsp chili powder
  • 1 tbsp oregano
  • 1 tsp cumin
  • 1/8 tsp salt
  • 2 cans pinto beans
  • 1 can crushed tomatoes
  • cilantro (topping)

In a saucepan, heat oil over medium heat. Add peppers, onion, mushrooms, celery, and garlic. cook for about 7 minutes, or until vegetables begin to soften. Add spices/powders, and cook 5 minutes more. Add beans and tomato. Stir occasionally while letting flavor mingle for around 30 more minutes. Serve and top with cilantro.

Nutritional Info:

For a 2-cup serving: 230 calories, 5 grams fat, 12 grams protein, 35 grams carbs, 12 grams fiber.
