Banana Cheesecake Oatmeal

Happy Monday! I decided to start off the new week with a new recipe!

Here’s what went down…

The night before, I blended the following in my Magic Bullet:

  • 1/2 cup cottage cheese
  • 1/2 banana
  • splash of almond milk
  • optional: cinnamon, sweetener

I let it set in the fridge overnight.

The result in the morning was a delicious thick cheesecake-like mixture!

I then whipped up 1/3 cup oats cooked in 1 cup water, cinnamon, and vanilla and added 1 teaspoon of chia seeds (optional)

Towards the end of the cooking process, I added in MOST of the cheesecake mixture. (saving some to put on top)

stirred it in real good…

Plopped it in my new bowl from Olga (thanks, girl!) and topped it with the rest of the cheesecake mixture:
