Turkey Veg Balls

A tastey way to sneak in extra veggies!


Preheat oven to 400 degrees


  • 1 package lean ground turkey (1 1/4 pounds)
  • 1 large egg
  • 1/2 cup oats
  • 1 small can tomato sauce (8 oz.)
  • 1-2 cups veggies, pulsed in food processor (i use spinach, onion, carrots, broccoli, snap peas)
  • 1/4 tsp each salt and pepper

Combine above ingredients and form into balls. Place on a foil lined baking sheet sprayed with cooking spray. Cook in oven for about 20 minutes.

While balls are cooking, prepare this simple and quick sauce:

  • 2 small cans tomato sauce (8 oz each)
  • 3-4 tbsp parsley flakes
  • 2 tsp worcheshire sauce
  • dash of stevia

Stir together. Take balls out of oven and coat well with sauce:


Return to oven for 7-10 minutes more.
