Time for a New Year

Happy New Years Eve!!!!

I have to say that this year came and went in the blink of an eye. I’m sure you all can agree with me! This one had it’s ups and downs for me so I am definitely ready for a fresh start. A new year. A new me. I am setting the bar high for next year because, like I’ve said before, I truly feel like it’s going to be the best one yet. I will be ending a huge chapter in my life, and starting a whole new one. Ending high school, moving out of the only house I’ve ever lived in, living in a different town, going to college, making new friends…lots of new experiences are up ahead!

Confession: I LOVE making New Years resolutions. I am still thinking about mine though so I’ll save that for my next post.

Today was spent working at the bank until 3 o’clock. Thankfully we got to close early for the holiday. Wooohooo! I came home and lounged around, ate some good food, and watched Dr Oz and Real Housewives of Orange County reruns. It was so surreal to actually be home in the afternoon and relax. I didn’t know what to do with myself! My weekday afternoons are always spent at work (boo) so it was a much appreciated time. Now I’ve got Katie’s Buffalo Chicken Casserole in the oven and am counting down the minutes until I get to dive in. Thanks for recipe, Katie!!!

Here is some food I’ve been munching on as of late:


Paaaaaancakes! Carrot cake, to be exact. I blended up 1/2 cup oats, 1/2 cup cottage cheese, 1/4 cup almond milk, 1/4 cup egg whites, cinnamon, and some grated carrot.

Then I plopped them on my new pancake skillet (love!)


I topped them with blended silken tofu (sweetened with stevia) and maple syrup. mmmm!

This was the best protein shake I’ve made in a long time!! 1 scoop of Scivation whey (chocolate flavor) and about 1/4 cup frozen cranberries blended with 1 cup almond milk and a few ice cubes. This combo rocked!! I am loving cranberries!


Eating in a container is fun. Hey, all the cool kids do it.

baked tofu, sweet tater fries, and broccoli love. I love dipping my fries and tofu planks into tomato paste. You all should trust me on this one and try it.


I tried a pizzert!!! It was life changing…really. So life changing that you poor readers can’t even have the pleasure of seeing a picture of the whole pie because I dove right in before snapping a picture. I managed to get this picture halfway through though, so it will have to do for now. Don’t worry, there should be many more in my future. 🙂


Done and done.

Tonight for New Years, we are staying in. We have had wintery weather all day and roads are pretty slick…so I’d rather be cuddled up safe and sound at home. Yes, I am 80 years old and proud of it. There is talk of homemade pizza though and that is enough to get me excited!

    all your food looks so yummy, as always!! and of course makes me wish i was eating healthier, besides the lucky charms i’m living on 😉 although sweet potato fries sound SO GOOD right about now, i’m going to see if i have any!

    Ummmmmmmmmm how about me and Mike had amazing plans for a NYE party in chicago, we bought the tix 2 months ago, and we didnt go , I actually got a rash that I have had for a week, and it drastically got worse our second day in chicago, so we stayed in and had whole foods hot bar, and mike had burrito beach, I wasnt up for going out, but we had a great nye : ) just need to get better, doctor monday to figure it out ; ) love ya girl!

    Dipping in tomato paste actually sounds delish! Whenever I cook with it, I lick the spoon! haha, it’s like ketchup minus all the added gunk! 🙂
