Picture Unload Monday? Why yes, I think so!

First up…my new favorite things.

New Favorite Water bottle:

bought on sale from Vitacost. You just tear the individual packets and squeeze into your mouth. It decided it tastes like an orange julius from Dairy Queen. Was anybody else obsessed with these when they were younger? Deeeelish.

New Favorite Snack:


Brownie Batter Cereal: First, whip up some protein brownie batter (a serving of protein powder, almond milk, and cocoa powder) and smash it into the bottom of a bowl. Put your cereal and/or fruit or other mix ins on top. Pour almond milk over everything and enjoy creamy chocolately bits in every bite. 🙂 I used kamut puffs as my cereal…i love them! They are airy, delicious, and only 50 cals per cup!

New Favorite Pre-Workout Food:


mini overnight oats consisting of 20 grams of oats, 1 scoop Sun Warrior protein powder, 1/2 scoop amazing grass powder, cinnamon, 1 dash of chia seeds, and 1/3 cup almond milk. Perfect carb + protein to fuel up before an early morning workout, but not feel too full.

best ever vegan bean burgers! I make up a big batch and freeze them. They freeze and microwave wonderfully.

Vegan Bean Burgers

Ingredients: (makes 6 burgers)

  • 2 cans black beans (rinsed and drained)
  • 2 carrots, grated
  • 1/2 cup dry rolled oats
  • 1/4 cup pepitas (pumpkin seeds)
  • 1 tbsp olive oil
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp chili powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1 tsp sea salt
  • 1/4 tsp black pepper

To Prepare:  Preheat oven to 300 degrees.  Next, add the oats and pepitas to your food processor and grind until coarsely chopped (they will still be a little chunky).  Let it run for roughly 10 seconds.  Grate the carrots, and then add to your mixture in the food processor.  Add 3/4 of the beans, all spices, and the olive oil.  Once all of this is in the food processor, give it a whir and mix it all together.

Spoon mixture into a mixing bowl and then fold in the rest of the whole, reserved beans.  Wet your hands and then form into 6 medium sized patties.  Place patties on a non-stick baking sheet or into a baking pan, and bake at 300 degrees for 40 minutes, turning once in the middle. 



I had one with kale chips and sweet potato + pb last night.

Time to get going! It’s back to the ol’ grind today after a glorious Spring Break. I already got school knocked out. Time for work now…and the countdown to Summer begins!!!

    I am loving all your protein filled eats!

    I love protein brownie batter! I like using SunWarrior with just water, and some cinnamon, maple syrup, and sliced apples all mixed together for a snack lately ! So good!

      I like Sun Warrior brown rice protein, Nutribiotic brown rice protein, and my newest favorite company is trueprotein.com. You can completely customize your own protein powders…very cool and great customer service!!

      It varies depending on what I’m in the mood for but I’ll usually get in 3 strength training workouts and fill in with some form of cardio on the other days…sometimes just walking my pup!

    All your foodie pictures are making my mouth water!! 🙂 My latest favorite is peanut butter pasta – simply peanut butter mixed with whole wheat pasta! LOVE it!

    Wow!!! So much food! I remember when I had to picture unload all of the time. I don’t take nearly as many pics now…actually I haven’t taken one in forever. 😦 I need to get back to blogging!!!

    Anyway! Nice food. I made the cauli pizza too, but mine never really got crispy. Maybe I needed to leave it in longer.

      I am LOVING my Camelbak!!! The main thing I like is that it has a no-spill top (you have to bite it in order for the water to come out) and before, I was always spilling my water bottles, haha. So it is working out perfectly for me!
