You know you’re a health nut when…

…your week is made by scoring a free Kombucha at the health food store.

Yep, that’s right. FREE KOMBUCHA. Apparently, the last time I went to this store to buy one, it was expired. They wrote my name down so they could give me a free one the next time I came in! Awesome customer service! And I don’t even care that I drank an expired Kombucha, because 1.) it still tasted delicious and 2.) I GOT A FREE KOMBUCHA.  I’m not ashamed to admit how excited this made me. I’m sure we all can agree that Kombucha comes with a hefty price tag (although very worth it), so yes, I was pretty pumped. 😀

Yesterday I had a really great workout, including workout #2 of tri-sets, and a 30 minute incline walk/run on the treadmill. This morning I planned out a circuit but my body is feeling exhausted. I’m not sure why? Yesterday’s workout was the first workout I did this week due to business so it’s definitely not due to over-exercising. I’m going to listen to my body though and take a rest day!

On the food front, I made an awesome loaf of banana pumpkin bread:

I used this recipe, except I used spelt flour instead of whole wheat and subbed 1 cup of flour for protein powder. It is spectacular! I’m thinking next time I will add shredded zucchini to combine all 3 of my favorite baked breads into one: banana, pumpkin, and zucchini. mmmmm!

VOO (vegan overnight oats) 1/2 cup oats, 3/4 cup milk, 1/2 tbsp chia seeds, 1 tsp spirulina, cinnamon, Sun Warrior protein, frozen blueberries, and strawberries on top

the last of my new bread with hummus, almond cheddar, and beans. asparagus and grapes

dough bowl: 3/4 cup cottage cheese, 1/4 cup greek yogurt, 1/4 cup blueberries, 1/4 cup oats, stevia, peanut butter on top

The base of a great dinner:

whole wheat penne and silken tofu transformed to make THIS:

alfredo lovin’.

The sauce:

1/2 block silken tofu

a lot of nutritional yeast

black pepper, sea salt, basil, oregano.

Blend it all up and pour on top of pasta and broccoli. Devour.

In the News:

Looks like movie theaters are taking steps to incorporate healthier food items into their menus. AMC chain theaters are now offering a SmartMovie Snackers Pack consisting of a trail mix bar, fruit chips, light popcorn, and bottle water. I love that healthy options are becoming more and more available and less scarce. We are headed in the right direction! 🙂

Tonight I’m seeing Water for Elephants with Rob Pattinson and Reese Witherspoon. I love both of them so I’ve got high hopes for this movie!

      No I haven’t. My store only carries a few flavors but I’ll have to look out for that one elsewhere. sounds delish!
