Hello!
Thanks for the compliments on my Easter post! You all are too sweet. 🙂
I have a lot coming up in this week. From here on out, things are going to be go, go, go until school is over, but I am so ready for it. Lets get things moving so I can get to sweet Summer!!!
On Thursday, I will be volunteering for Kansas Kid’s Fitness Day! Basically, all the elementary schools are brought over to the high school field to play various games and just be active! They are split up by classrooms and each volunteer is in charge of one group, which they will lead around to the different fitness stops and show their group how to perform each activity. I’ve been very excited about this opportunity because I feel it will be right up my alley. I think it’s so important to teach children good health habits while they are young, so they keep it up as they grow older. Should be a fun time!!
Then Saturday is PROM! I’ve got my dress, got my shoes, made my hair and makeup appointment and I’m ready to celebrate! I can’t believe the week is already here. It is crazy how fast the time has been flying by!
On top of that, of course I’ll be keeping up with school and work. At times I feel like I’m losing my mind with everything going on. I’ll admit I have taken a lot on this year (probably more than I should have) and I am getting to my breaking point. Did I tell you I put in my notice at the bank? My last day is May 13th!!! A big chapter of my life is coming to a close very soon, and then I will be starting a whole new one. My job doesn’t make me happy anymore and in this new chapter of my life, I really want to make an effort to do the things that make me happy. So out with the old and in with the new! I have no idea what lies ahead of me, but I am so excited to find out! I am fully confident that God has great plans for me, so I will just just keep trusting in Him and He will take care of the rest. 🙂
Food Highlights:
egg white oatbran with peanut flour paste (1/4 cup peanut flour mixed with almond milk and sea salt) and strawberry jam
peanut flour cake with banana and real peanut butter
mexican platter of spiralized zucchini, greens, almond cheddar, salsa, gaucamole, and seitan
SO GOOD!!!
Mung bean pasta with silken tofu “alfredo” (silken tofu, almond milk, sea salt, seasonings, nooch, all blended) spinach, and broiled tilapia
mexican salad with hummus, salsa, and almond cheddar
pre workout bite of a medjool date and nuttzo!
post workout green monster protein shake and pumpkin banana bread
banana chip walnut protein muffins. these rocked, thanks Katie!
with regular pb and dark chocolate dreams. Ah the life of an indecisive eater. 🙂
snackage consisting of sweet potato fries, roasted beets, pumpkin banana bread, carrots in the hummus container, and a random strawberry

How in God’s beautiful green earth did you make that amazing egg white oat bran?? Drool! 😛
I just microwave 1/2 cup oatbran with 1 cup water for a few minutes, take it out and add in 1/2 cup liquid egg whites, stir, and microwave for a few minutes more. super simple!
