Wednesday Party!

Yup, you know what day of the week it is…Wednesday, aka What I ate Wednesday. But first, I wanted to thank you all for the awesome tips for eating healthy in a college dorm room. There was so much good advice and I definitely feel much better about the whole thing. I know it will just take some getting used to and then I will fall into a routine no problem. Besides, I have a feeling that it will all be worth it anyways. 🙂

Now…let’s get this party started!

 

Breakfast:

messy strawberry banana cookie dough cereal (1/2 cup oats, 1 tbsp soynut butter, 1 scoop vanilla pea protein, cinnamon, almond milk, fruit on top)

Lunch:

snack plate at it’s finest: egg casserole, falafel with mustard, snap peas, rye crackers with cottage cheese, refried beans, and salsa.

Snack:

peanut flour paste bites + kamnut puffs in almond milk

Snack Round Two:

a whole grain wrap with refried beans, hummus, spinach, sprouts, and avocado. Good stuff.

Dinner:

stuffed chicken, roasted broccoli and turnips in coconut oil and seasonings, and fresh corn

Two things regarding this dinner:

1. I stuffed my chicken with a mixture of fresh basil, cottage cheese, and laughing cow light…it rocked.

2. Roasted turnips taste like potatoes wedges, in a good, good way. I dipped them in ketchup and bet I could have fooled a lot of people with that swap. You should try it!

Evening Snack:

3/4 cup daisy lowfat cottage cheese with protein cookies on top

The protein cookies were another winner for Oxygen Mag. I get such good ideas from them! These were super easy to make and although the magazine says 12 servings, it’s basically 2 servings for me. I’d like to see the person who actually gets 12 servings out of this. Nonetheless it’s still a winner!

Protein Cookies:

  • 1/2 cup oats
  • 1 serving protein powder
  • 1 tbsp almond butter
  • pinch of baking powder
  • chocolate or carob chips (optional)
  • water, to thin

Mix everything together, form small balls and plop on a baking sheet. Bake at 350 for 6-10 minutes. (recipe says 10 but I did 8 minutes and could have even done less, but I like my cookies more on the doughy side)

What I Worked Wednesday:

Wednesday mornings are almost always Body Pump mornings, and today was no exception. It was fabulous per usual and I followed it with a walk at the trail before it got hot out. Great start to my Wednesday! 🙂

 

Before I go, I read an interesting article recently that I thought would be beneficial for many of you: Menstrual Cycle Injury Risk Link. It talks about when women are more susceptible to injury according to their cycle. I had no idea!

Today I’m going to tackle some things on the to-do list, as well as the College To-Do List. I hope you all have a fantastic day!

    Peanut flour paste bites… what is that exactly? I am intrigued!

      I mix 1/4 cup peanut flour with a dash of sea salt (and sometimes stevia) and a splash of water or almond milk. It should be very thick and then I just break it up into bites. It’s so good!

    The cookies are awesome with carob chips! Mike LOVED them, I made them last night! I like with raspberries , but chips better!!

    WIAW confuses me. Everyone posts it early it the day, so I know it’s not what you ate THAT wednesday. Does everyone post what they ate on Tuesday on WIAW? Or do you post what you ate the previous Wednesday? I want to join in, but I don’t know what to do!

      The great thing is that there is no “right” way to do it. Some people just post one meal..maybe it was eaten on Wednesday, or maybe it was eaten earlier in the week. I usually post what I ate on Tuesday and i know a lot of people who do it that way, too. But everyone just does their own thing and it’s all good! 🙂 Definitely join in!
