Baked Turkey Meatballs

This recipe is very simple and fast to make. Leftovers refrigerate well, so they make a great fast protein option to add to any meal. I like to eat them several ways, including over sauteed greens with marinara sauce, in a wrap, or of course, with spaghetti (or spaghetti squash!)

Ingredients:

1 package (1.25 lbs) lean ground turkey

1/4 cup oats

2 egg whites (or 1 large egg)

1/2 onion, diced

couple handfuls of torn spinach

1/2 tsp salt

1/2 tsp pepper

1 tsp red pepper flakes

1 tsp garlic powder

1 tbsp italian seasonings~ oregano, basil, parsley

1 tsp worchestire sauce

Directions:

Saute or microwave diced onion to get it soft. Then mix everything together in a bowl. Form into small balls and place on a greased baking sheet. Bake at 400 degrees for approximately 15-20 minutes. (oven time will vary, watch carefully)

    I think I’m going to make this recipe vegetarian-style. I bet all of those seasonings would work well with tofu. 🙂
