Almost There

Hey!

Welp, it’s been one big study party over here so far this week. I know, you’re jealous. It’s okay.

But the good news is that in just a few more days, my finals will all be over with and I can enjoy a few weeks of much needed T.L.C. I can’t wait! In the mean time, please excuse and ignore all spelling/grammar errors and all other shenanigans as my brain is just a bit too filled with Macroeconomics and Biology at the moment. 🙂

Either way, I have some picture unloading from the last few days so I was not going to miss another round of What I Ate Wednesday!

The awesome folks of Coaches Oats kindly sent me some steal cut goodness to try out:

Now I know why so many rave about them! These are cracked steel cut oats, so they require much less cooking time than the regular steel cut variety. I cooked them up the same way I do my rolled oats and they came out thick, chewy, creamy, and voluminous. I’m in love! I have not seen them in stores anywhere around here but I spotted a pretty good deal here on Amazon for them. I will definitely be buying more!

steel cut apple pie protein egg white oats. Cooked in water/almond milk/egg whites/cinnamon and added a microwaved chopped Jazz apple and a scoop of cinnamon protein powder—>I like to just slightly mix it in around the top so you can really taste it! Only if you use a good tasting protein powder though, ha ha. 🙂

*The bar recipe is a winner! So tastey! Coconut flour in baked goods (or anything really) is so darn good.

been a while since I have made that recipe but it will be in the rotation a lot more now! This is a great carb source to make for Weekend Prep and have portions ready to warm up and eat. It is so easy to make and full of creamy cheezey goodness!

CHEETAHS. I will never tire of sweet potatoes…or kabocha. You will almost always find some in my fridge. I like to toss them in coconut oil and sea salt and bake up big batches at a time.

That concludes my break from studying….it was fun while it lasted. Time to keep conquering! I’ve got a great workout to share to you all though soon, so check back!

    Just had spaghetti squash a couple of nights ago! One of my favs! And YES i love orange foods – especially pumpkin!!! MMM and oranges 🙂

    Your eats are beautiful! I’ve never had kabocha but I eat orange veggies out the wazoo. If my meal doesn’t have a sweet potato, carrot, or squash in it, I get sad.

    We have freeeekishly similar tastes(man, do we have good taste!), seriously , this is like ALL my perfect food.

    Coconut flour is by FAR one of the greatest discoveries- I ❤ it just as much a peanut flour( but for different uses:o), I like it in yogurt the best I think, I'm gonna HAVE to try out those bars!

    I'm in the exact same squash situation- like its a mandatory component of life- I always have it roasted in my fridge too.

    And my bright orange hands answer your last question.

    Iv bookmarked that risotto and I'm away to copy one of your fantastic snacky plates:).

    um, i think my avatar and my orange palms signal my LOVE of orange foods! 🙂 i’m actually taking a forced break from kabocha to try and lighten up the palms a little bit… dying though! also dying for that cheesecake!!!

    I can’t believe you haven’t seen coaches oats. They actually have them all over in Canada, which is surprising! Lovely eats my friend. I love PB and egg whites together, so good. And seriously, coconut flour does taste good in anything. I think I eat it every single day. That and coconut oil or butter, I can not get enough of. Coconut obsessed. Good luck with the rest of your finals!!
