Getting In the Spirit

I know it’s Thanksgiving Week and all, but someone is definitely in the Christmas spirit around here…I wonder who that could be?

Attempts at assembling a Christmas tree are being made…

^^^ This is currently happening. Not by me though…you see, anything that comes with directions hates me. This is not being dramatic, this is just my real life. So anyways, thank goodness for friends who will come to my rescue and accept me for my direction-following disabilities. πŸ™‚ Although…I am noticing as I type this that the top start of the tree is refusing to light up. Fingers crossed someone figures out what to do because it definitely won’t be me with the answer. ha ha.

Aside from feeling the Holiday Spirit, I’ve also been tasting some good eats! Let’s see what I have for this week’s What I Ate Wednesday!

cinnamon bun pumpkin pancakes with coconut peanut butter for dipping

roasted delicata squash, spaghetti squash boat with chicken sausage and marinara

I haven’t been able to spot any kabocha lately (the tragedy!) but luckily I’ve become very good friends with delicata. Mmmhmmm.

cinnamon sugar fluff bowl: with 2% greek yogurt, shredded wheat cereal, cinnamon, and a sprinkle of stevia

peanutty dessert hummus with 34 degree cracker crisps and carrots

vegan butternut mac n cheese, roasted broccoli, sauteed mushrooms and spinach, and a dilled egg.

I’m so glad I finally got around to trying that mac n cheese! I made mine with sweet potato instead and it turned out deeeelish. I love that the sauce is nut-based (cashews) because you know it’s going to turn out rich and decadent, especially in addition to the squash. I will be making it again soon, next time with butternut. Can’t wait!

chocolate mint chip ice cream, chocolate sludge with peanut butter (chocolate protein, dark cocoa, blended cottage cheese, greek yogurt, almond milk)

What’s one to do when they can’t decide which dessert to have? Combine them both, but of course. πŸ˜€

For today’s workout, I did a quadruple set of strength training tabatas. Stay tuned for the workout to be posted soon. It was a good one!

    Tree is going up tomorrow night…I don’t think I can pick just one favorite thing haha…but I love gingerbread coffee and hot chocolate and sugar cookie tea (bonus points for throwing in some baileys πŸ˜‰ )…and I have two fav Christmas songs: All I Want For Christmas Is You (the version in Love Actually) and I’ll Be Home For Christmas (Josh Groban style)

    Eeee! I can’t wait to break out the Christmas tree! I usually try and hold off until December to start decorating, but I’ve definitely been breaking into the seasonal teas and treats. I really want to try Sugar Cookie Sleigh Ride, but I haven’t been able to find it up here in Canada… Gingerbread Spice has been treating me pretty well though πŸ˜€

    No Christmas for me until Santa appears in the Macy’s Parade! Mom hates putting Christmas up! Why does your food always look so amazing! I have to try that mac n cheese and those pancakes! Happy Thanksgiving!

    Oh yum! I wish we could live together, because we seriously have identical taste buds:) We just put up our Christmas tree and I’m so excited. Like it’s probably super annoying ha. Jealous of your sugar cookie tea, for some reason Canada doesn’t sell it! Have a nice Thanksgiving day!
