What a tease Thanksgiving Break was. It was one week that lasted what seemed like five minutes. But at least it was a good five minutes. πŸ™‚

I’ll spare you the lamp, soda can, and carpet pictures. What a stinker. πŸ™‚

In case you still have any leftover turkey, I must guide you all to perfect way to make a brand new meal out of it. I’ve mentioned it before on the blog, but it’s definitely fitting right now…

These are nice and veggie filled, but I always like to add another veggie side. That night it was sauteed mushrooms and spinach: a combo I’ve been loving! Anyone else adore mushrooms? I can eat them raw or cooked and I’m in Heaven.

For What I Ate Wednesday, here are a few more recent eats:

Snickerdoodle Pancakes. I am so glad I finally tried this recipe! I am pretty partial to my cinnabun pancakes, but these definitely satisfied my taste buds. I recommend giving it a try!

Another veggie love as of late? Brussel sprouts! They are perfectly in season right now and I am actually craving them! Normal, totally normal.

I did a variation of Paige’s Coconut Blueberry Bars, which turned out to taste like a vanilla cake. Um yeah, gonna be making that again soon. I subbed oat flour for the almond meal but kept everything else the same.

cashews and prunes. Haha, what an old lady snack, but hey it’s a tasty one at that. No shame.

leftover Thanksgiving ham, roasted butternut squash, and brussels. AWESOME dipping sauce—>tbsp mustard, tbsp nutritional yeast, tbsp milk, dash of salt and pepper. So easy and goooood with veggies!

soft-serve vanilla protein ice cream variation with half blended cottage cheese/half greek yogurt and 2 tbsp pudding powder added

The good news is that this week is already flying by, which will leave me with two more weeks before Winter Break. I am definitely looking forward to five glorious weeks involving absolutely no school. YES.

    Thanksgiving break was a TOTAL tease for me as well. I’m having a tough time getting back into the swing of things this week. I was laughing so hard at the pictures your cousin took HAHA!

    Haha, I was just telling a friend the other day how I felt the weekend went by nice and slow…of course now that it’s over, I want to go back and do it all over again! Lol

    The snickerdoodle pancakes look pretty yummy! You cinnamon bun ones look good, too! I love making different kinds of pancakes, so I’ll be trying your recipes soon!

    Break went by WAY too fast! I LOVE mushrooms and Brussels sprouts and deff crave them so I think it’s normal lol πŸ˜€ Glad you had such a great break! 2 weeks!

    I seriously need to start baking more, and those bars look great! I always just see recipes and write them off if I don’t have the ingredients, but I never think of all the substitutions I could use!
