Hi all! Thanks everyone for the birthday wishes. Its seems that the shoe cake might have been the favorite, haha.
My brain is already mush 3 days into the semester. Whew! So here’s a quick collaboration of eats for this week’s What I Ate Wednesday. Nothing too out of the ordinary for me; sometimes when you have a million other things going on, creativity is not exactly on the priority list…so I stick with what I know to be delicious!
overnight oats: 3/4 cup dry oats, 1 cup almond milk, 1/2 cup water, 2 tsp chia seeds, 1 scoop vanilla protein powder, 1/2 cup greek yogurt, cinnamon
Sun-dried tomato wrap with ham, pickles, cream cheese, spinach, salt, and pepper. Sweet and savory zucchini muffins, steamed broccoli and carrots
kale, bacon, turkey, egg white scramble with peanut butter, english muffin with butter and seasoned salt
2% greek yogurt mixed with 2 tbsp dark cocoa powder and stevia. banana bread cookie
banana bread cookie, chocolate peanut butter brownie, cantaloupe, and cottage cheese. Love my snack plates!
P.S., that brownie recipe is a winner.
Good Earth is becoming a regular in my house! You know how much I like this one…well this superfruit green tea blend could give it a run for it’s money. I like it iced in the afternoon. yum!
vegetarian black bean and cheese zucchini boats with coconut oil roasted kabocha squash. *New recipe alert*
SEA BASS..aka my love. Seriously best fish ever. along with creamy whipped mashed potatoes and roasted zucchini pasta with lots of seasonings.
cinnamon bun cheesecake with peanut butter and a fresh peach
fro-yo with another brownie (see above)
Fro-yo: 1 cup greek yogurt, 1/2 scoop chocolate protein, 2 tbsp dark cocoa powder, stevia, 1/4 cup almond milk—>freeze 1-2 hours and re-blend with stick blender until ice cream consistency. Can you say favorite?
Has anyone else’s schedule gotten extremely busy like mine? Hopefully my little goal/challenge with help keep me sane! I have been doing pretty well with it so far but I have to come clean and admit I haven’t nailed every day. But who wants to be perfect anyways? Perfect is boring and not to mention impossible. I am striving to improve myself and grow in relation to where I am now; not compared to anyone else; not to reach perfection.
That’s all I’ve got today! Time to get busy on some homework. Guess what starts tomorrow? CHEMISTRY II. Yeah!!!! <insert face of extreme sarcasm.>

Can I just say I look forward to your WIAW the most out of them all?! I know our tastebuds would be best friends– seriously, that sea bass, and the brownies, and the kabocha, and the cheesecake– GOODNESS! If you’ll excuse me, I need to go wipe the drool off my face now haha 😉

I love that tea..Lipton has also got some really good & fruity green tea blends. Also I’ve got to say I’m impressed with all the variety you have in a day & the amount of time it looks like you spend on making a meal especially with how busy you are 🙂
I’m pretty speedy in the kitchen. Honestly most of the things I make don’t take me more than 15 minutes to prepare!

Since I got my cinnamon bun protein powder last week, I really need to get to the store to get some cottage cheese to make that cheesecake!! Everytime I see it posted on your blog, I can’t help but almost start drooling 🙂

Whoa, we actually do have EERILY similar taste in food–I’m obsessed with basically everything you created. I have got to try the frozen greek yogurt/protein powder concoction. And I also have to pair my creamy desserts with some sort of cookie/muffin/granola..just get some texture in there!
